This popular Pacific Northwest fast-casual chain sells my favorite rice and bean bowls. It&rsquo;s my meal of choice at the Portland airport and I&rsquo;ll usually go out of my way to pick one up when I&rsquo;m out running errands.<\/p>\n\n\n\n<p>There&rsquo;s so much good stuff in these vegan grain bowls, like tomatoes, avocado, black beans, and salsa, but it wouldn&rsquo;t be an <a href=\"https:\/\/www.cafeyumm.com\/menu\/original\/\">Original Caf&eacute; Yumm Bowl<\/a> without the Yumm Sauce drizzled over top. This cheesy, savory, and tangy sauce is SO good that I constantly find myself craving it at home.<\/p>\n\n\n\n<p>My <strong>Yum Bowl Recipe<\/strong> is my vegan-friendly copycat version of the classic. Just like with my <a href=\"https:\/\/frommybowl.com\/vegan-zuppa-toscana-olive-garden\/\">Copycat Vegan Zuppa Toscana<\/a>, it&rsquo;s as good as what you&rsquo;d get at the restaurant &ndash; but you&rsquo;re free to customize or double up on the toppings as much as you want (without the extra $$$). If you&rsquo;ve never been to the PNW but love a good grain bowl with a delicious sauce, you&rsquo;re going to love these Yum Bowls.<\/p>\n\n<\/div><!-- .block-callout__inner --><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"ingredients-for-this-yumm-bowl-copycat\"><strong>Ingredients for This Yumm Bowl Copycat<\/strong><\/h2>\n\n\n\n<p>These copycat Caf&eacute; Yumm bowls are made with almost all of the same ingredients as what you&rsquo;d find at the chain restaurant, including an amazing homemade vegan Yum Sauce. You can stay true to the original if you want or swap the brown rice for white rice, quinoa, or the cooked grain of your choice.&nbsp;<\/li>\n\n\n\n<li><strong>Beans<\/strong>: black beans are the classic choice, but pinto beans, cannellini beans, and kidney beans are good options, too. Stick with canned beans to keep things simple or go all-out with my spicy-ish <a href=\"https:\/\/frommybowl.com\/chipotle-black-beans\/\">Instant Pot Chipotle Black Beans<\/a>.<\/li>\n\n\n\n<li><strong>Tomatoes<\/strong>: diced fresh tomatoes give these bowls a hint of freshness.&nbsp;<\/li>\n\n\n\n<li><strong>Avocado<\/strong>: between the avocado, sour cream, and yum sauce, there&rsquo;s a ton of creaminess in these grain bowls!&nbsp;<\/li>\n\n\n\n<li><strong>Toppings<\/strong>: to round out every bite, I topped the yum bowls with black olives, <a href=\"https:\/\/frommybowl.com\/easy-homemade-salsa\/\">chunky salsa<\/a>, vegan shredded cheese, and a dollop of dairy-free sour cream. I wanted to keep the toppings as close to the real thing as possible but you can easily mix and match them as much as you&rsquo;d like.<\/li>\n<\/ul>\n\n\n\n<p><strong>Yum Sauce<\/strong>: the star of this recipe! After countless tests, I discovered that a blended mix of slivered almonds, nutritional yeast, garbanzo beans, lemon juice, and a few more pantry staples yields the most realistic Yumm Sauce around. It&rsquo;s creamy, cheesy, and comes with a tangy kick! I highly recommend making a double batch to drizzle on even more <a href=\"https:\/\/frommybowl.com\/nourish-bowls-maple-turmeric-tofu\/\">grain bowls<\/a>, use as a vegetable dip, toss with <a href=\"https:\/\/frommybowl.com\/tex-mex-black-bean-salad-vegan\/\">Tex Mex salads<\/a>, and so much more.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"how-to-make-vegan-yum-bowls\"><strong>How to Make Vegan Yum Bowls<\/strong><\/h2>\n\n\n<div class=\"block-callout layout-beta has-background has-nonary-background-color\"><div class=\"block-callout__inner\">\n\n<ol class=\"wp-block-list\">\n<li><strong>Chop<\/strong> the veggies, <strong>cook<\/strong> the rice, and <strong>warm<\/strong> up the beans.&nbsp;<\/li>\n\n\n\n<li><strong>Divide<\/strong> the rice and beans between serving bowls. <strong>Top<\/strong> each bowl with half of the tomato, avocado, olives, salsa, cheese, and sour cream.&nbsp;<\/li>\n\n\n\n<li>Generously <strong>drizzle<\/strong> each bowl with yum sauce, then <strong>garnish<\/strong> with cilantro. <strong>Serve<\/strong> immediately and enjoy.<\/li>\n<\/ol>\n\n<\/div><!-- .block-callout__inner --><\/div>\n\n<div class=\"block-cooking-tips has-background has-background-background-color\"><svg class=\"block-cooking-tips__icon\" width=\"76\" height=\"76\" aria-hidden=\"true\" role=\"img\" focusable=\"false\"><use href=\"#color-bowl-raindrops\"><\/use><\/svg>\n\n<p class=\"block-cooking-tips__title\">Caitlin&rsquo;s Cooking Tips<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prep all of the bowl components ahead of time<\/strong>. You can save a lot of time here by chopping the vegetables, cooking the rice, preparing the toppings, and making the yum sauce 2 to 3 days in advance. Once they&rsquo;re ready, pack each of the components into individual airtight containers and keep them in the fridge until you&rsquo;re ready to assemble the bowls.<\/li>\n\n\n\n<li><strong>Wait to add the avocado!<\/strong> Do not add the avocado until right before you serve the yum bowls. If it&rsquo;s added too early or sits for a long time, the avocado will turn brown and lose its fresh, creamy flavor.<\/li>\n\n\n\n<li><strong>Save time with leftover cooked rice<\/strong>: Already have cooked rice in your fridge? Go ahead and use it instead of cooking a fresh batch. Before assembling the bowls, heat up the day-old rice in a medium pan with a small splash of water over medium heat until it&rsquo;s steaming and warmed through. They hold up well and still taste amazing even after sitting in the fridge for a few days. The avocado will brown over time but the bowls will still taste good.<\/p>\n\n\n\n<p>Vegan yum bowls couldn&rsquo;t be more perfect for meal prep. To keep everything fresh, divide the rice and beans between meal prep containers and top each one with tomatoes, olives, salsa, cheese, and sour cream.
