It&rsquo;s essentially an Asian rice pudding* made by cooking rice in lots of water (way more than usual!). I can&rsquo;t get over its <em>ridiculously<\/em> silky and porridge-like consistency. It&rsquo;s usually served for breakfast in East Asia (plain or topped with protein, green onions, sesame oil, and\/or chili oil), but this Turmeric Ginger Congee recipe is a Chinese-Indian fusion that&rsquo;s hearty and savory, making for a cozy lunch or dinner. (*<em>Note: <\/em>many Asian cultures feature their own variation of congee, but I first came across it in my exploration of Chinese cuisine).<\/p>\n\n\n\n<p>In a quest to create a cozy and comforting winter-friendly recipe I combined two of my favorite things: <strong>congee<\/strong> and <strong>warm Indian spices<\/strong>. The congee is infused with turmeric and ginger, then finished with a tadka (Indian spices tempered in oil) to highlight the delicate flavor notes that can be lost during long cooking times. Crispy mushrooms and baked tofu are my toppings of choice and I know you&rsquo;ll love them, too!<\/p>\n\n\n\n<p>Best of all, making this white rice porridge is <strong>fuss-free<\/strong>. Use your Instant Pot or the stove to make the congee, then bake the mushrooms and tofu. You can buy jasmine rice at almost any well-stocked grocery store or Asian grocery store.<\/li>\n\n\n\n<li><strong>Turmeric<\/strong>: A sprinkle of ground turmeric is the source of the gorgeous golden color in this congee.<\/li>\n\n\n\n<li><strong>Ginger<\/strong>: Use freshly peeled ginger here. It gives the rice porridge a bright pop of flavor that you typically won&rsquo;t get from ground ginger.<\/li>\n\n\n\n<li><strong>Mushrooms<\/strong>: I&rsquo;d recommend using a mushroom mix for a variety of umami flavors and textures. Fresh shiitake, oyster, cremini, and\/or brown beech mushrooms are my favorites, but any mix will do.<\/li>\n\n\n\n<li><strong>Tofu<\/strong>: Opt for super firm tofu or extra firm tofu. They&rsquo;ve both got a meaty texture that makes the congee nice and hearty!<\/li>\n\n\n\n<li><strong>Oil<\/strong>: Use any high-heat oil, like avocado oil, peanut oil, or vegetable oil, to bloom the Indian spices for the tadka (it&rsquo;s how we bring out their amazing hidden flavors!).<\/li>\n\n\n\n<li><strong>Aromatics and spices<\/strong>: I used a blend of cumin seeds, coriander seeds, a cinnamon stick, fennel seeds, a dried chili pepper, and garlic cloves for the Indian tadka. You can buy most or all of these spices at your local Indian grocery store, but keep in mind that the cinnamon, fennel, and pepper are all optional, so feel free to leave them out if you can&rsquo;t find them!<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"how-to-make-turmeric-ginger-congee\"><strong>How to Make Turmeric Ginger Congee<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"735\" height=\"1102\" data-pin-url=\"https:\/\/frommybowl.com\/turmeric-ginger-congee-crispy-mushrooms\/?tp_image_id=23654\" data-pin-nopin=\"1\" src=\"https:\/\/frommybowl.com\/wp-content\/uploads\/2024\/02\/Vegan_Turmeric-_Ginger_Congee_Process_FromMyBowl.png\" alt=\"a collage of six images showing the below described cooking process step-by-step\" class=\"wp-image-23654\" srcset=\"https:\/\/frommybowl.com\/wp-content\/uploads\/2024\/02\/Vegan_Turmeric-_Ginger_Congee_Process_FromMyBowl.png 735w, https:\/\/frommybowl.com\/wp-content\/uploads\/2024\/02\/Vegan_Turmeric-_Ginger_Congee_Process_FromMyBowl-400x600.png 400w\" sizes=\"auto, (max-width: 735px) 100vw, 735px\" \/><\/figure>\n\n\n<div class=\"block-callout layout-beta has-background has-nonary-background-color\"><div class=\"block-callout__inner\">\n\n<ol class=\"wp-block-list\">\n<li><strong>Cook<\/strong> the rice with the turmeric, ginger, salt, and water either in the <strong>Instant Pot<\/strong> or on the <strong>stovetop<\/strong> until thick and creamy.<\/li>\n\n\n\n<li>Meanwhile, <strong>toss<\/strong> the mushrooms in salt and oil, then lay them on one half of a baking sheet. <strong>Toss<\/strong> the tofu with salt, garlic powder, and oil, then <strong>lay<\/strong> on the other half of the baking sheet.<\/li>\n\n\n\n<li><strong>Bake<\/strong> until the mushrooms are golden and crisp.<\/li>\n\n\n\n<li><strong>Warm<\/strong> the oil in a small pan over medium heat. <strong>Bloom<\/strong> the cumin, coriander, fennel seeds, cinnamon, and pepper in the shimmering oil for 45 to 60 seconds. Add the garlic and <strong>saut&eacute;<\/strong> for 1 more minute.<\/li>\n\n\n\n<li><strong>Pour<\/strong> the tadka into the congee and <strong>stir<\/strong> to combine.<\/li>\n\n\n\n<li><strong>Serve<\/strong> the congee in bowls and <strong>top<\/strong> with tofu, crispy mushrooms, sliced green onions, and cilantro. This removes any excess dirt from the grains and guarantees a congee that isn&rsquo;t sticky or gloopy!<\/li>\n\n\n\n<li><strong>Adjust the consistency<\/strong> <strong>of the congee<\/strong>. Personally, I like congee to be silky smooth, just like <a href=\"https:\/\/frommybowl.com\/instant-pot-steel-cut-oatmeal\/\">oatmeal<\/a> or porridge. If you prefer a thinner consistency, cook the rice in 7 or 8 cups of water instead. For a thicker congee, use only 5 cups of water.<\/li>\n\n\n\n<li><strong>Thinly slice the mushrooms<\/strong>. The thinner the slices, the crispier your mushrooms will be! If you plan on saving the leftovers, keep the congee, tadka, mushrooms, and tofu in separate airtight containers and store them in the fridge for up to 5 days.<\/p>\n\n\n\n<p>Reheat the leftover congee in the microwave or a saucepan on the stove over medium heat, stirring often, until it&rsquo;s heated through. The congee becomes thicker as it cools but stirring in a splash of vegetable stock or water will help thin it. That&rsquo;s why it&rsquo;s common to see congee recipes flavored with simple ingredients, like spices, garlic, ginger, lemongrass, vegetable broth, soy sauce, etc.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1707735319352\"><strong class=\"schema-faq-question\"><strong>Is congee just overcooked rice?<\/strong><\/strong> <p class=\"schema-faq-answer\">Technically, the rice <em>is<\/em> cooked a lot longer than usual to break down the grains and achieve the signature creamy consistency, but congee is so much more than just overcooked rice.
