It&rsquo;s similar in shape to butternut squash, but much smaller (think the size of a russet potato).<\/p>\n\n\n\n<p>Despite its small size, the honeynut squash packs a whole lot of flavor. It&rsquo;s often referred to as the sweet, nutty cousin of butternut and it lives up to the name. It&rsquo;s also nutrient rich &ndash; high in vitamin A, beta-carotene and fiber. If you can&rsquo;t find miso, substitute &frac12; teaspoon of sea salt instead.&nbsp;<\/li><li><strong>Maple syrup: <\/strong>Pure, grade-A maple syrup is my maple syrup of choice, but any pure maple syrup you have on hand would work. You could even substitute a similar liquid sweetener such as agave nectar or brown rice syrup as needed.<\/li><li><strong>Oil: <\/strong>For best results, pick a neutral tasting oil with a high-smoke point. Olive oil, avocado oil, vegetable oil, and refined coconut oil would all be good choices.&nbsp;<\/li><li><strong>Black pepper: <\/strong>Freshly cracked black pepper adds the perfect spicy bite to the sweet and savory roasted squash. Repeat with remaining squash halves.<\/li><li><strong>Shake <\/strong>the oil, miso paste, maple syrup, and black pepper together in a jar until uniform.<\/li><li><strong>Coat <\/strong>each squash with the marinade using a basting brush or spoon.<\/li><li><strong>Bake <\/strong>until tender and browned, about 25 minutes.&nbsp;<\/li><li><strong>Serve <\/strong>warm and <strong>season <\/strong>with pepper to taste.&nbsp;<\/li><\/ol>\n\n<\/div><!-- .block-callout__inner --><\/div>\n\n<div class=\"block-cooking-tips has-background has-background-background-color\"><svg class=\"block-cooking-tips__icon\" width=\"76\" height=\"76\" aria-hidden=\"true\" role=\"img\" focusable=\"false\"><use href=\"#color-bowl-raindrops\"><\/use><\/svg>\n\n<p class=\"block-cooking-tips__title\">Caitlin&rsquo;s Cooking Tips<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Use cheap chopsticks. <\/strong>Although I highly recommend breaking out your good chopsticks when serving <a href=\"https:\/\/frommybowl.com\/vegan-cashew-chicken-tofu\/\">Vegan Cashew &ldquo;Chicken&rdquo;<\/a>, cheap, takeout chopsticks are the better choice when cutting hasselback potatoes or squash of any kind. For best results, allow the squash to cool completely before covering and storing. It&rsquo;s more pleasant to eat peeled and easier to digest.&nbsp;<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1669917785591\"><strong class=\"schema-faq-question\">W<strong>here can I buy honeynut squash? <\/strong><\/strong> <p class=\"schema-faq-answer\">During the fall and winter months, honeynut squash is often sold in stores right next to the butternut squash, acorn squash, etc. They can be more difficult to find than more mainstream squashes, so you may have better luck checking your local health food store or farmer&rsquo;s market!&nbsp;<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1669917799228\"><strong class=\"schema-faq-question\"><strong>Will honeynut squash ripen off the vine?<\/strong><\/strong> <p class=\"schema-faq-answer\">If you are lucky enough to live in a climate where you can grow winter squash in your own backyard, you may be wondering when to pick your honeynut squash. Although it is best to allow the squash to fully ripen on the vine, winter squash will continue to ripen off the vine, as long as it is <em>almost<\/em> mature when picked.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1669917856590\"><strong class=\"schema-faq-question\"><strong>Is honeynut squash a hybrid? <\/strong><\/strong> <p class=\"schema-faq-answer\">Yep.
