I needed something to make for an elementary school project with my kids at the end of last year… I was skeptical and had a sinking feeling this would all go to waste. The teachers emailed me to ask for the recipe for themselves and multiple kids who asked for it… whaaat?! My SUPER picky non-vegetable-eating 12 y/o has been asking for this on repeat. I don’t know how this happened, but I’m loving it.

And we do have 3 very picky eaters aka kids :p. This salad is no different, i needed a black bean recipe but fresh, and oh boy what a success. Everywhere we bring this salad to, i already know i will be fw the recipe later! We are completely addicted to your recipes and this is our go to place for whenever we need any inspo for cooking.
