I love these! I’ve made them three times and they’ve been a hit each time. This was my first time rolling a pastry and it was actually very easy with the instructions! One thing I will say: if you’re considering not using parchment paper, just use it. The first two times I made these I didn’t have any on hand and just used a nonstick pan, and they stuck something fierce (of course) and also burned. With the parchment paper, they came right off and cooked perfectly.

Made the recipe exactly as written and 10/10 would make again! Delicious, even my non-vegan friends loved them!
I used Violife brand 3-cheese blend (just what I had on hand) and Violife vegan parm and boring old white button mushrooms.
Would be perfect for freezing in advance and pulling out and baking for a quick snack!
I refrigerated the filled dough for about 30 minutes and used a sharp knife to cut them into 16 pieces. I didn’t fill the ends well, so I cut those off and enjoyed those as a chef’s treat, leaving 14 delicious little bites!

I’ve made these twice now and they were great! Everyone I’ve given them to loves them! This is now the standard thing I make when I have a leftover sheet of puff pastry as I typically only use 1 at a time when the box comes with two.
Both times I’ve made these, I used a knife to cut them and they were completely fine. It is a good call to chill the roll before cutting though, especially if you’re going to make them pretty thin as the recipe calls for (the first time, I made big ones and only cut the roll into 8 pieces instead of 16 – which also came our great).
Next time, I may try to brush the puff pastry with some dijon mustard to change it up but it’s perfect as written.
