This 3-Ingredient Hummus Salad Dressing is perfect for a quick, easy, and tasty fix! Use it to top your favorite salad or veggie bowl.
While I love to cook, there are some days where I simply cannot be bothered. Over the years I’ve become quite the pro at leftover re-imagination and speedy hodgepodge dinners. Enter the Hummus Salad Dressing: for those days when you want to eat your veggies, but can’t be bothered to make a fancy dressing.
Luckily for you, this “dressing” takes less than 5 minutes and is only made from 3 plant-based ingredients that you already have in your fridge. How’s that for a quick and easy fix?

Yep, you heard me! You only need Hummus, Dijon Mustard, and Lemon Juice to make this dressing — plus enough filtered water to thin everything out to your liking. The Hummus gives it some body and creaminess, while the remaining ingredients help bring some brightness, acidity, and depth of flavor to the table.

I honestly prefer this dressing to storebought dressings, and make it even when I do have more time the kitchen. It’s preservative free and easy to customize the ingredient ratios to personal preference. Plus, those pureed chickpeas give the dressing extra fiber and plant-based protein, meaning you’ll stay full and satisfied even longer.

I’ve put this dressing on pretty much everything. Kale, Romaine, Mixed Greens…you name it! The flavor is prominent enough to add depth to your meal, but also neutral enough to compliment anything. Heck, don’t even let the word dressing limit you. I’ll also use this as a sauce with my grain bowls, drizzle it over roasted veggies, or even mix it in with some pasta.

Now, I’m not claiming that this recipe is original (I’m sure there are other variations already out there), nor is it going to be the most amazing thing you’ll put in your mouth ever. But it does taste good, hit the spot, and do the trick when you need an easy sauce or dressing.
And honestly? On a busy weeknight when I’m tired and want to get my fork to my face as fast as possible, that’s more than good enough for me 🙂

A Few Final Thoughts:
- Customize as you please! I usually keep my dressing bare-bones, but you could definitely spice it up with some of your favorite seasonings. You could also experiment with different flavors of hummus!
- Typically I make this on an as-needed basis, but you could also double or triple the recipe and store it in your fridge for an even easier meal.
- Try to use fresh Lemon Juice over the canned/preserved stuff. It really helps to brighten the dressing and make it taste as good as possible!

Ingredients
- ½ cup Garlic Hummus
- 1 tbsp Dijon Mustard
- Juice of ½ Lemon
- 2-4 tbsp Filtered Water
Instructions
- Add the Hummus, Mustard, and Lemon Juice to a small bowl and mix with a spoon or fork until well-combined.
- Add in water in 1 tbsp increments until your desired thickness is reached, then serve as desired! Leftovers will keep in the fridge for up to one week.
