Didnt have cashews so I substituted the cashews+water in the cashew cream for a can of coconut milk. Still has a nice nutty flavor from the miso. Such a nice comforting winter miso soup!

I honestly hate people like me because I change recipes while cooking. This soup was awesome. And I despise celerly. Like I think it should be eradicated like global warming. I made this, added zucchini, and used coconut milk because I didn’t have time to soak the cashews. I live in ecuador so it’s hard to get some ingredients. This was amazing. I wish I still made my own veggie broth but I haven’t. Caitlin, I have followed you for years. Thank you for your enthusiam and your dedication to teaching us cooking even through your pursuit of an advanced education. Much love from Ecuador! And we have extra bedrooms….. Come Visit!

O.M.G. This soup is amazing!! Both my husband and I thoroughly enjoyed it! I’m excited to try your other creations! I have been recently diagnosed with heart issues, and after much research, have decided to adopt a plant based diet. Having been born, and raised, in the Midwest, however, has made it a difficult to transition. Like you said in your backstory, recipes are either way too complicated, and/or contain unfamiliar ingredients that are not practical (for midwestern women like me) Whatever. I just want you to know how much I appreciate your determination and hard work. Please know that you are not only saving animals (thank you), but you are also saving humans. Understand that. Thank you so much! You’re an angel! can I say that?
