I used only about half the quantities of herbs called for, and I still found them really overpowering. The apple, squash, and coconut milk are all relatively delicate flavors; the herbs were just too much.

Delicious.
Due to dietary issues, I sauteed onions and garlic in oil to infuse for flavour, then disguarded chunks. Added diced apples and herbs to the infused oil. Roasted my squash and added later and then let all simmer in a pot. The squash fell apart nicely and the softened apples retained their shape. I didn’t puree. Wonderful. Thank you!

This recipe is great as is but is also very versatile. I usually make it in the instant pot – cook on high for 8 minutes. The only thing I feel like it’s missing is a little brightness. Before serving I’ll add some lemon or fresh parsley or goat cheese. Sometimes I’ll throw in some carrots ginger and turmeric during cold season.

You do not need to peel the apple for this recipe. The apple peel adds texture and flavor to the soup, and since Granny Smith apples have a tart flavor, their peel won’t affect the taste negatively. So, feel free to leave the peel on the apple when dicing it for the butternut squash apple soup.
