I did this recipe and served it over a bed of brown rice and it was so good. But then leftovers with the sauce soaking into the rice… mmmmmmm, I think that might have been even better. My last batch I dusted with just a bit of crushed red pepper when I plated it up. This is definitely going to the front of the recipe box.

I used a cheat to speed this up even more for a weeknight, which was a few big spoonfuls of Trader Joes red pepper spread instead of roasting and blending the peppers myself. It was so delicious! The only other thing I changed was adding some handfuls of baby spinach at the end. I love a meal that still feels good even though I’m eating a lot of bread!

It will be so easy to keep these ingredients on hand for a fast, but indulgent and healthy, weeknight meal in the future.
